Chicken breasts can sometimes be quite dry and lacking in taste. However, experts have revealed the secret to making them juicy and flavourful by using just one cheap item.
Brian Lagerstrom, a YouTube , explains that seasoning the chicken before cooking is vital. He said the most important ingredient is salt and the best chicken breasts are brined beforehand. Although this method is usually used on thicker meats, it helps make the chicken juicier and more flavoursome.
As reported by , the chef said: "Dry brining is the process of adding salt directly to the surface of the meat, and wet brining is where you dissolve that salt into water to create, you know, a brine."
Brian suggests following the wet brine method to make chicken breasts juicier. He advises to add 5% salt by weight of the amount of water, before leaving the chicken to marinate for one to two hours.
His method, which he shares in a video showing ways "to instantly upgrade your chicken breasts", involves adding salt, sugar, garlic and herbs to a sauce pan and bring to a boil. Let it simmer for 10 minutes and turn off the head. Then, allow it to steep for another five minutes.
You should then add ice into a container and pour the brine over it. Once it's melted, add the chicken and allow it to brine before removing it and drying it with paper towels.
You can then refrigerate the chicken until it's ready to cook. Here is the full list of ingredients needed:
- 1qt/L water
- 150g or 1/2c salt
- 50g or 1/4c granulated sugar
- Two bay leaves
- One head of garlic, halved
- Sprigs of rosemary, sage, and thyme for brine + additional to finish
- 1000g or 2 qt ice
- Two halves of skin-on deboned chicken
- Vegetable oil
- 50-70g or 4-5 tbsp unsalted butter
